I just installed the latest Windows Update on my Windows 8.1 machine and noticed the Bing Bar and the Bing Desktop installed. Not only that, the default search is switched to Bing.
It will ask you to set the Bing home page, MSN, default search provider and so on. You may want to disable all these. I did :)
Once the Bing Toolbar will be floating on your desktop.

I am not sure if you like all this.
Personally, I don't like clutter on my machine and I also don't like too many processes running in the background. So, I went ahead and removed them.
To uninstall Bing Bar and Bing Desktop on Windows 8.1
WIN+Q and search for Programs and Features
Select Program and Features and you will go to Uninstall or change a program
Select Bing Bar and Bing Desktop and click on the Uninstall button.
